  • 4 cups water

Instructions:

  1. Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes. Drain and set aside.
  2. Heat ghee or oil in a large pot over medium heat. Add cumin seeds and fry for a few seconds.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Add ginger-garlic paste, chopped tomatoes, and green chilies. Cook for 2-3 minutes until the tomatoes are soft.
  5. Add mixed vegetables and paneer cubes. Cook for 5-6 minutes.
  6. Add coriander powder, garam masala powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
  7. Add the soaked rice to the pot and mix gently.
  8. Pour in 4 cups of water and bring to a boil. Reduce the heat to low and cover the pot with a tight-fitting lid.
  9. Cook for 15-20 minutes until the rice is cooked and the water has been absorbed.
  10. Turn off the heat and let the biryani rest for 5 minutes.
  11. Fluff the rice with a fork and garnish with fresh coriander leaves.
