Ingredients:
For the rice:
- 2 cups basmati rice
- 4 cups water
- 1 bay leaf
- 2 cardamom pods
- 2 cloves
- 1 cinnamon stick
- Salt to taste
For the biryani:
- 1 kg chicken or mutton (cut into medium-sized pieces)
- 1 cup yogurt
- 2 onions (finely chopped)
- 2 tomatoes (finely chopped)
- 1 tablespoon ginger-garlic paste
- 2 green chilies (slit lengthwise)
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala powder
- Salt to taste
- 1/2 cup mint leaves (chopped)
- 1/2 cup coriander leaves (chopped)
- 1/2 cup fried onions
- 1/2 cup ghee or oil
- Saffron strands (soaked in milk)
- 1 tablespoon rose water
Instructions:
- Wash the rice thoroughly and soak it in water for at least 30 minutes.
- In a pot, bring water to a boil and add bay leaf, cardamom pods, cloves, cinnamon stick, and salt. Drain the soaked rice and add it to the pot. Cook the rice until it is 70% done. Drain the water and set the rice aside.
- In a separate pot, heat ghee or oil and fry the onions until they are golden brown. Add ginger-garlic paste and fry for another minute.
- Add the meat and cook until it changes color. Add tomatoes and cook until they are soft and mashed.
- Add green chilies, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Cook for 2-3 minutes.
- Add yogurt, mint leaves, and coriander leaves. Mix well and cook until the meat is tender and the gravy is thick.
- In a large pot, spread a layer of the meat mixture at the bottom. Add a layer of rice on top. Add a layer of fried onions and repeat the layers. Finish with a layer of rice on top.
- Sprinkle saffron milk and rose water on top of the rice. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes.
- Once done, let it sit for 10 minutes before serving.
Hyderabadi Biryani is a dish that requires some time and effort, but the end result is worth it.
