Hyderabadi Biryani is a delicious and flavorful dish that originates from the city of Hyderabad in southern India. It is a unique blend of fragrant basmati rice, spices, and tender meat or vegetables that is cooked together in a traditional dum style, resulting in an aromatic and flavorful dish that is sure to satisfy any craving for authentic Indian cuisine.

Ingredients:

For the rice:

  • 2 cups basmati rice
  • 4 cups water
  • 1 bay leaf
  • 2 cardamom pods
  • 2 cloves
  • 1 cinnamon stick
  • Salt to taste

For the biryani:

  • 1 kg chicken or mutton (cut into medium-sized pieces)
  • 1 cup yogurt
  • 2 onions (finely chopped)
  • 2 tomatoes (finely chopped)
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies (slit lengthwise)
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 1/2 cup mint leaves (chopped)
  • 1/2 cup coriander leaves (chopped)
  • 1/2 cup fried onions
  • 1/2 cup ghee or oil
  • Saffron strands (soaked in milk)
  • 1 tablespoon rose water

Instructions:

  1. Wash the rice thoroughly and soak it in water for at least 30 minutes.
  2. In a pot, bring water to a boil and add bay leaf, cardamom pods, cloves, cinnamon stick, and salt. Drain the soaked rice and add it to the pot. Cook the rice until it is 70% done. Drain the water and set the rice aside.
  3. In a separate pot, heat ghee or oil and fry the onions until they are golden brown. Add ginger-garlic paste and fry for another minute.
  4. Add the meat and cook until it changes color. Add tomatoes and cook until they are soft and mashed.
  5. Add green chilies, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Cook for 2-3 minutes.
  6. Add yogurt, mint leaves, and coriander leaves. Mix well and cook until the meat is tender and the gravy is thick.
  7. In a large pot, spread a layer of the meat mixture at the bottom. Add a layer of rice on top. Add a layer of fried onions and repeat the layers. Finish with a layer of rice on top.
  8. Sprinkle saffron milk and rose water on top of the rice. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes.
  9. Once done, let it sit for 10 minutes before serving.

Hyderabadi Biryani is a dish that requires some time and effort, but the end result is worth it.
