Ingredients:

  • 1 kg chicken
  • 500g basmati rice
  • 2 cups yogurt
  • 3 onions, thinly sliced
  • 4-5 green chilies, chopped
  • 1 cup oil
  • 4 cloves of garlic, minced
  • 2-inch piece of ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1 tsp salt
  • A few strands of saffron, soaked in ¼ cup of milk
  • 1 tsp rose water
  • A handful of mint leaves
  • A handful of coriander leaves

Instructions:

  1. Clean the chicken and cut it into small pieces. Marinate the chicken in yogurt, ginger, garlic, green chilies, and salt for at least 2 hours.

  2. Soak the rice in water for 30 minutes. In a separate pan, heat oil and fry the onions until golden brown. Remove the onions from the oil and set them aside.

  3. In the same oil, add cumin seeds, coriander powder, red chili powder, turmeric powder, and garam masala powder. Fry the spices for a minute.

  4. Add the marinated chicken to the pan and cook for 10-15 minutes or until the chicken is cooked through.

  5. In a large pot, bring water to a boil and add salt. Drain the soaked rice and add it to the pot. Cook the rice until it is almost done.

  6. Drain the rice and spread half of it in a large pot. Add the chicken on top of the rice, then add the remaining rice on top of the chicken.

  7. Sprinkle saffron milk, rose water, and fried onions on top of the rice. Add mint leaves and coriander leaves on top.

  8. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes or until the rice is fully cooked.

  9. Serve hot with raita and salad.
