Ingredients:

  • 2 cups of basmati rice

  • 1 tbsp of red chili powder
  • 1 tsp of turmeric powder
  • 1 tsp of cumin powder

  • 1 tsp of garam masala powder
  • 1 cup of yogurt
  • Salt, to taste
  • Oil, as needed
  • 1 cup of fried onions
  • 2 tbsp of chopped mint leaves
  • 2 tbsp of chopped cilantro leaves
  • 2-3 green chilies, chopped
  • A pinch of saffron soaked in 2 tbsp of milk
  • 1 tbsp of rose water

Instructions:

  1. Rinse the basmati rice thoroughly and soak it in water for 30 minutes.

  2. Heat oil in a large pan and sauté the sliced onions until they turn golden brown. Remove half of the onions and set them aside for garnishing.

  3. Add the chicken to the remaining onions in the pan and sauté until the chicken is cooked through.

  4. Add the chopped tomato, ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, and salt to the pan. Mix well and cook for 5-7 minutes.

  5. Add the yogurt to the pan and mix well. Cook for another 5-7 minutes.

  6. Drain the water from the soaked rice and add it to a pot of boiling water. Cook the rice until it is 80% done.

  7. Layer the rice on top of the chicken mixture in the pan.

  8. Add the fried onions, chopped mint leaves, chopped cilantro leaves, and chopped green chilies on top of the rice.

  9. Pour the saffron milk and rose water on top of the rice.

  10. Cover the pan tightly with a lid and cook on low heat for 20-25 minutes.

  11. Garnish the biryani with the remaining fried onions and serve hot with raita or salad.
