Malabar Biryani Recipe: How to Make Delicious Malabar Biryani at Home

Biryani is a classic South Asian dish that is famous all around the world. Among the many different types of biryanis, the Malabar biryani, from the Malabar region in Kerala, India, stands out for its unique blend of flavors and aromatic spices. This biryani is characterized by the use of fragrant long-grain rice, tender meat, and a blend of spices that creates a mouth-watering flavor that is sure to delight your taste buds.

In this blog post, we will walk you through the step-by-step process of making delicious Malabar biryani at home. So, let's get started!

Ingredients:

  • 500g basmati rice
  • 750g chicken or lamb
  • 3 onions, sliced
  • 4 tomatoes, chopped
  • 1 cup of yogurt
  • 4-5 green chilies, slit
  • 1/4 cup of mint leaves
  • 1/4 cup of coriander leaves
  • 2 tsp of ginger paste
  • 2 tsp of garlic paste
  • 2 tsp of garam masala
  • 2 tsp of biryani masala
  • 1 tsp of turmeric powder
  • 1 tsp of red chili powder
  • 1 tsp of cumin seeds
  • 1 tsp of black pepper powder
  • 3-4 cloves
  • 3-4 cardamom pods
  • 2 bay leaves
  • 1/4 cup of oil or ghee
  • Salt to taste
  • Fried onions, cashews, and raisins (for garnish)

Instructions:

  1. Soak the basmati rice in water for about 30 minutes. Drain the water and set aside.

  2. In a large pot, heat the oil or ghee and add the whole spices (cloves, cardamom pods, bay leaves, and cumin seeds) and sauté for a minute until fragrant.

  3. Add the sliced onions and sauté until they turn golden brown.

  4. Add the ginger paste and garlic paste and sauté for a minute until the raw smell disappears.

  5. Add the chopped tomatoes, green chilies, mint leaves, coriander leaves, and all the spices (garam masala, biryani masala, turmeric powder, red chili powder, and black pepper powder) and sauté until the oil separates from the mixture.

  6. Add the chicken or lamb and mix well until the meat is coated with the spice mixture. Add salt to taste and cook on low heat for about 10-15 minutes until the meat is cooked through.

  7. In a separate pot, boil enough water to cook the rice. Add the rice and cook until it is 70% done. Drain the water and set aside.

  8. In a large oven-safe pot, layer the cooked meat mixture at the bottom, followed by a layer of cooked rice. Repeat the layering process until all the rice and meat mixture is used up.

  9. Pour the yogurt over the top layer of rice and spread it evenly.

  10. Cover the pot with a tight-fitting lid and bake in a preheated oven at 350°F for about 30-35 minutes until the rice is fully cooked.

  11. Remove from the oven and let it rest for about 10-15 minutes before serving.

  12. Garnish with fried onions, cashews, and raisins before serving.
