Lucknowi Biryani, also known as Awadhi Biryani, is a popular and delicious dish that originates from the city of Lucknow in India. Ingredients:

  • 1 kg Basmati rice
  • 500 grams mutton or chicken
  • 4 onions, sliced
  • 4 tbsp ghee or oil
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 2 cups yogurt
  • 2 bay leaves
  • 2 cinnamon sticks
  • 6 green cardamoms
  • 6 cloves
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp saffron strands
  • 1 tbsp milk
  • Salt to taste

Instructions:

  1. Soak the basmati rice in water for 30 minutes. Drain the water and keep the rice aside.
  2. Heat ghee or oil in a heavy-bottomed pan. Add sliced onions and fry until they turn golden brown. Remove half of the fried onions and keep them aside.
  3. To the remaining onions in the pan, add ginger paste and garlic paste. Fry for 2-3 minutes.
  4. Add meat to the pan and fry until it is browned on all sides.
  5. Add yogurt, bay leaves, cinnamon sticks, green cardamoms, cloves, cumin seeds, red chili powder, coriander powder, garam masala powder, and salt to taste. Mix well and cook for 10-15 minutes until the meat is cooked through.
  6. In a separate pot, bring water to a boil. Add the soaked rice and cook for 10-15 minutes or until the rice is partially cooked.
  7. Drain the water from the rice and keep the rice aside.
  8. Preheat the oven to 180°C.
  9. In a large baking dish, layer the cooked meat mixture and the partially cooked rice. Sprinkle saffron strands over the rice.
  10. Pour milk over the saffron strands.
  11. Cover the dish with aluminum foil and bake in the preheated oven for 30-35 minutes.
  12. Once done, remove the foil and sprinkle the remaining fried onions over the rice.
  13. Serve hot with raita or salan.
