Ingredients:
- 1 kg Basmati rice
- 500 grams mutton or chicken
- 4 onions, sliced
- 4 tbsp ghee or oil
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 2 cups yogurt
- 2 bay leaves
- 2 cinnamon sticks
- 6 green cardamoms
- 6 cloves
- 1 tsp cumin seeds
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 1 tsp saffron strands
- 1 tbsp milk
- Salt to taste
Instructions:
- Soak the basmati rice in water for 30 minutes. Drain the water and keep the rice aside.
- Heat ghee or oil in a heavy-bottomed pan. Add sliced onions and fry until they turn golden brown. Remove half of the fried onions and keep them aside.
- To the remaining onions in the pan, add ginger paste and garlic paste. Fry for 2-3 minutes.
- Add meat to the pan and fry until it is browned on all sides.
- Add yogurt, bay leaves, cinnamon sticks, green cardamoms, cloves, cumin seeds, red chili powder, coriander powder, garam masala powder, and salt to taste. Mix well and cook for 10-15 minutes until the meat is cooked through.
- In a separate pot, bring water to a boil. Add the soaked rice and cook for 10-15 minutes or until the rice is partially cooked.
- Drain the water from the rice and keep the rice aside.
- Preheat the oven to 180°C.
- In a large baking dish, layer the cooked meat mixture and the partially cooked rice. Sprinkle saffron strands over the rice.
- Pour milk over the saffron strands.
- Cover the dish with aluminum foil and bake in the preheated oven for 30-35 minutes.
- Once done, remove the foil and sprinkle the remaining fried onions over the rice.
- Serve hot with raita or salan.
