Kolkata Biryani Recipe: A Flavorful Delight from the City of Joy

Ingredients:

  • 500 gm of Basmati Rice
  • 1 kg of Chicken/Mutton
  • 2 large Onions (sliced)
  • 2 tbsp of Ginger Paste
  • 2 tbsp of Garlic Paste
  • 1 cup of Curd
  • 4-5 Green Chilies (slit)
  • 2 Bay Leaves
  • 4-5 Cloves
  • 2-3 Green Cardamoms
  • 1-2 Black Cardamoms
  • 1 Cinnamon Stick
  • 1 tsp of Cumin Seeds
  • 1 tsp of Red Chili Powder
  • 1 tsp of Turmeric Powder
  • 1 tsp of Garam Masala Powder
  • 1 tsp of Biryani Masala Powder
  • 2-3 tbsp of Ghee
  • 1 tsp of Salt (or as per taste)
  • 4-5 cups of Water

For Garnishing:

  • Fried Onions
  • Chopped Coriander Leaves
  • Lemon Wedges

Instructions:

  1. Wash the rice and soak it in water for at least 30 minutes.

  2. Heat ghee in a large pan or pot. Add sliced onions and fry until golden brown.

  3. Add ginger paste and garlic paste to the fried onions and fry for a minute.

  4. Add chicken or mutton pieces to the pan and fry until the meat changes its color.

  5. Add curd, green chilies, bay leaves, cloves, green cardamoms, black cardamoms, cinnamon stick, cumin seeds, red chili powder, turmeric powder, garam masala powder, and biryani masala powder to the meat. Mix well and cook for a few minutes.

  6. Add salt and 4-5 cups of water to the pan. Cover the pan with a lid and let it cook for 15-20 minutes or until the meat is cooked.

  7. Drain the soaked rice and add it to the pan. Mix the rice and the meat gently.

  8. Cover the pan with a lid and let the rice cook on low heat for 15-20 minutes or until the rice is cooked and fluffy.

  9. Turn off the heat and let the biryani sit for 5 minutes.

  10. Garnish the biryani with fried onions, chopped coriander leaves, and lemon wedges.

  11. Serve hot with raita, salad, or your favorite side dish.
