Biryani is one of the most popular dishes in the Indian subcontinent. It is a flavorful combination of rice, meat, and spices that tantalizes the taste buds with every bite. One of the most famous types of biryani is the Bombay Biryani. Originating from the city of Mumbai, Bombay Biryani is a spicy and aromatic dish that is loved by people of all ages. Ingredients:

  • 500g basmati rice
  • 1 kg chicken, cut into medium-sized pieces
  • 4 onions, sliced thinly
  • 2 tomatoes, chopped
  • 1/2 cup yogurt
  • 1/2 cup mint leaves, chopped
  • 1/2 cup coriander leaves, chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 4-5 green chilies, chopped
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 2 tsp garam masala powder
  • 2 bay leaves
  • 4-5 cloves
  • 4-5 green cardamoms
  • 1 cinnamon stick
  • Salt to taste
  • Oil for cooking

Method:

  1. Soak the rice in water for 30 minutes.

  2. In a pan, heat oil and fry the sliced onions until they turn golden brown. Remove half of the onions from the pan and keep them aside.

  3. Add chicken to the remaining onions in the pan and cook until the chicken is browned.

  4. Add ginger and garlic paste, chopped tomatoes, chopped green chilies, red chili powder, turmeric powder, garam masala powder, and salt to taste. Mix well and cook for 5-7 minutes.

  5. Add yogurt, mint leaves, and coriander leaves to the chicken mixture. Cover the pan and cook for another 10-12 minutes or until the chicken is cooked through.

  6. In a separate pot, boil water and add bay leaves, cloves, green cardamoms, and cinnamon stick. Drain the soaked rice and add it to the pot. Cook until the rice is 3/4th done.

  7. Take half of the cooked chicken mixture and spread it evenly on top of the rice. Repeat the layering process with the remaining rice and chicken mixture.

  8. Spread the fried onions on top of the layered biryani.

  9. Cover the pot with a tight lid and cook on low heat for 10-15 minutes or until the rice is fully cooked and the flavors have melded together.

  10. Serve hot with raita, salad, and papad.
