Biryani is a popular dish that is enjoyed by people all over the world. It is a rice dish that is made with a combination of spices, vegetables, and meat. Bhatkali Biryani is a popular variation of biryani that originated in the coastal town of Bhatkal in Karnataka, India. Ingredients:
- 2 cups basmati rice
- 500g chicken or mutton, cut into small pieces
- 1 cup sliced onions
- 1 cup chopped tomatoes
- 1 cup yogurt
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala powder
- 1/2 cup chopped fresh coriander leaves
- 1/2 cup chopped mint leaves
- 4-5 green chilies, slit
- 2 bay leaves
- 3-4 cloves
- 3-4 green cardamoms
- 1 cinnamon stick
- 1 teaspoon saffron strands
- Salt to taste
- Oil for cooking
Instructions:
Rinse the basmati rice thoroughly and soak it in water for 30 minutes.
In a deep pan, heat oil and add sliced onions. Fry until they turn golden brown.
Add ginger and garlic paste and sauté for a minute.
Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Sauté for 2-3 minutes until the tomatoes turn soft.
Add chicken or mutton pieces and sauté on high flame for 3-4 minutes.
Add yogurt and mix well. Cover and cook on low flame until the meat is tender.
In a separate pan, heat water and add bay leaves, cloves, green cardamoms, and cinnamon stick.
Once the water starts boiling, add soaked basmati rice and cook until the rice is 80% done. Drain the water and keep the rice aside.
Once the meat is cooked, add chopped fresh coriander leaves, mint leaves, and green chilies. Mix well.
In a small bowl, soak saffron strands in warm milk.
In a heavy-bottomed pan, layer the cooked meat at the bottom. Add a layer of rice on top of the meat.
Sprinkle saffron milk on top of the rice.
Repeat the layers of meat and rice until all the rice and meat are used up.
Cover the pan with a tight-fitting lid and cook on low flame for 15-20 minutes.
Serve hot with raita and salad.
