For the Biryani:
- 500 grams of Basmati rice
- 1 kg of chicken or mutton, cleaned and cut into pieces
- 2 onions, sliced
- 4 green chilies, slit
- 1 cup of yogurt
- 2 tsp of ginger garlic paste
- 1 tsp of red chili powder
- 1 tsp of turmeric powder
- 2 tbsp of ghee or clarified butter
- Salt to taste
- 1 cup of water
- 1/2 cup of chopped coriander leaves
- 1/2 cup of chopped mint leaves
Instructions:
- Soak the Basmati rice in water for 30 minutes. Drain and keep aside.
- In a pan, dry roast all the spices mentioned under the Biryani masala until fragrant. Once cooled, grind them to a fine powder.
- In a separate pan, heat the ghee or clarified butter and add the sliced onions. Fry them until golden brown and keep aside.
