Ingredients:

For the rice:

  • 2 cups of basmati rice
  • 4 cups of water
  • 2-3 bay leaves
  • 4-5 green cardamoms
  • 4-5 cloves
  • 1 cinnamon stick
  • Salt to taste

For the chicken:

  • 1 kg chicken, cut into medium-sized pieces
  • 1 cup of yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • 2 tsp cumin powder
  • Salt to taste
  • 2-3 bay leaves
  • 4-5 green cardamoms
  • 4-5 cloves
  • 1 cinnamon stick
  • 1 large onion, finely chopped
  • 2-3 green chilies, chopped
  • 2 tbsp oil

For the garnishing:

  • Fried onions
  • Chopped coriander leaves
  • Lemon wedges

Instructions:

  1. Wash the rice and soak it in water for 30 minutes. Drain the water and keep it aside.
  2. Heat water in a deep pot and add the whole spices, salt, and soaked rice. Cover and cook until the rice is almost done. It should take around 10-12 minutes. Once done, drain the water and keep it aside.
  3. In a separate bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Marinate the chicken pieces in this mixture for at least 30 minutes.
  4. Heat oil in a deep pan and add the whole spices. Once they start spluttering, add the chopped onions and green chilies. Sauté until the onions turn translucent.
  5. Add the marinated chicken pieces and cook for 15-20 minutes on medium heat. Make sure the chicken is cooked thoroughly.
  6. Preheat the oven to 180°C.
  7. Take a deep baking dish and layer the rice and chicken pieces alternately. Pour some chicken gravy on top.
  8. Cover the dish with foil and bake it in the oven for 20-25 minutes.
  9. Once done, take out the dish and remove the foil. Garnish with fried onions, chopped coriander leaves, and lemon wedges.
