Add the lamb or chicken and cook until browned on all sides.
Add the carrots, raisins, almonds, and all of the spices. Cook for 5 minutes, stirring occasionally.
Drain the rice and add it to the pot. Stir to combine.
Add the water and salt to taste. Bring the mixture to a boil, then reduce the heat to low.
Cover the pot and cook for 30-40 minutes or until the rice is fully cooked.
Remove the pot from the heat and let it sit for 10 minutes.
Fluff the rice with a fork and serve hot.
